I don’t write stories and poems but this got be fascinated because it might motivate someone. It might be you who is reading this piece. Yes You!!!!

l know you’ve had some rough times lately, but that’s not who you are..
Yes, I’m talking to you.
That doesn’t define you.
You’ve made some bad choices and been down the wrong roads, but that’s just part of life..
You can choose to stay down or you can decide you’re done dwelling on the bad experiences of the past and you’re moving on.
You can’t change where you’ve been and the future is yet to be written, so this is your opportunity to seize today.
You’re not the same person you once were- you’re not standing still and just surviving anymore.
You’re done being stuck in what’s happened and it’s your time to grow..
You know you’ve needed to evolve for some time, but now, this is your wake up call.
You got this.
You’re changing, little by little and day by day.
You’re better than you were yesterday and not as good as you’ll be tomorrow.
Let go of yesteryear’s baggage that is weighing you down so you can learn to fly free again.
Forgive the people you once knew and most of all, forgive yourself.
You did the best you could with what you had.
That person that got hurt, made mistakes and failed badly is gone.
You’re better, wiser and stronger now.
Own your life and take charge of the things that matter:
Love, friendships, career, your dreams..everything
Nothing is impossible if you start to believe..
And I believe in you more than you’ll ever know.
Embrace the new you in this new year and begin cultivating the transformation of you.
Stop surviving and just getting by.
You’re better than that.
Find your claws and dig yourself out of where you never should have been.
Unfurl your wings and start to fly again..
It’s been so long since you’ve truly lived that you’ve forgotten who you are..
You’ve lost your magic along the way.
So, yes, this is for you..this is that sign you’ve been searching for.
Don’t tell me you can’t or it’s hopeless..
You’re stronger than that.. you can do this.
I won’t tell you it’ll be easy or painless, but it will definitely be worth it.
Awaken your soul, find your voice, stoke the passions of your heart.
You won’t always know how to get where you want or how to get there..
But I can promise you, you’ll always end up exactly where you’re meant to be.
So, take my hand and let’s conquer today and all the days after.
If you can’t find the courage and bravery to believe in yourself again, take some of mine, because I believe in you.

A Gordon Bleu And A Schnitzel

Ready served chicken Gordon Bleu with rice and veggies

A cordon bleu (french dish); schnitzel (a swiss dish) is a dish of meat wrapped around cheese (or with cheese and ham filling), then breaded and pan-fried or deep-fried. Veal or pork cordon bleu is made of veal or pork pounded thin and wrapped around a slice of ham and a slice of cheese, breaded, and then pan fried or baked.These two dishes are all the same.Their source and inspiration of origin/ region is different. In my own way I like differenting the two by shape. My Gordon Bleu is oblong (rolled shape) While my schnitzel is flattened. I like serving my breaded dishes with mayonnaise or mustard sauces.

Let’s deal with Chicken Gordon Bleu and if you wish follow the same process with veal or pork Cutlets.

Ready prep chicken breasts
Eggwash
Plain flour and breadcrumbs
Ready stuffed breasts
Rolled ,breaded and ready for frying

Ingredients:
For the Chicken
4 chicken breasts
8 slices Swiss cheese
8 slices ham
1 cup. all-purpose flour
2 large eggs, beaten
2 cups bread crumbs
Oil for frying or butter if you wish. Salt to taste
Ground black pepper
1 tsp. dried mixed herbs (optional).


If serving with mustard sauce follow this simple process:
4 tbsp. butter
1/4 cup. all-purpose flour
2 cup. milk
2 tbsp. mustard sauce
1/4 cup grated Parmesan

Direction:
If using an oven then preheat oven to 200°c and line a large baking sheet with grease paper. Place a chicken breast between two pieces of plastic wrap on a cutting board and flatten to around ¼” thickness with a meat mallet or rolling pin (or alternatively make a cut through the breast and stuff the ham and cheese). Top chicken with 2 slices of cheese, then 2 slices of ham. Starting at the top of the breast, roll up tightly. Repeat with remaining chicken breasts.
Place flour, eggs, and breadcrumbs in three shallow bowls. Season flour with salt and pepper and herbs.
Working with one at a time, roll chicken first in flour, then eggs, then crumbs, pressing to coat. Place on prepared baking sheet. Bake until golden and cooked through, 30 minutes.
However if using deepfrying method ,dip your chicken patties in frying oil on a medium heat,cook till golden brown. I prefer using this style because it’s faster. Make sauce: In a large skillet over medium heat, melt butter. Add flour and stir until golden, 2 minutes. Slowly whisk in milk, then add mustard. Let simmer until thickened, 5-7 minutes. Add Parmesan and stir until melted. Season with salt and pepper.
Remove and serve Chicken with sauce.

If using Mayonnaise as your Dipping sauce then you are ready to go…..
