Mayo Chicken sandwich

This is one among various chicken sandwiches made with very basic ingredients. Can be served as a party or evening snack.Most chicken sandwiches will call for either boiled boneless chicken or grilled.

Ingredients :

  • 2 to 3 slices bread
  • ½ to ¾ cup chicken shredded cooled
  • 1 tsp Butter for toasting bread
  • 1 tbsp garlic minced or 2 cloves
  • 1 pinch Red chilli powder or 1/2pc green chillies chopped
  • 1 pinch black pepper ground
  • 3 tbsp mayonnaise
  • ¼ tsp mustard sauce(optional)
  • Salt as needed
  • 4 slices each of onions and cucumbes
  • 1sprig cilantro or parsley chopped finely
  • 2 Cos lettuce leaves
  • 1/2 medium green capsicum julienne
  • 2 tsp olive oil(optional)

Process

Preparation:

  1. Butter the bread slices and toast them on a griddle until golden. Set these aside. However, If using a Sandwitch press machine,then you don’t need to toast the bread,Just butter and stuff the chicken mixture as indicated in no.1 on assebling the sandwich.

  2. You can either boil the chicken or saute in oil to give a grilled like flavor and taste.Or even if you have a left over chicken from previous meal, then this is the right time to use.
  3. To saute , add some oil on the griddle and saute the garlic until it smells good.
  4. Saute chicken along with salt until done. Sprinkle the chilli.powder or chillies.Toss well. Switch off and set aside
  5. Add pepper, mustard powder and mayo to a bowl. Mix everything well.
  6. Add in onions and all the vegetable, Mix and add in the chicken.
    Assembling the sandwich

  1. Mix and spoon it over the toasted bread. Cover with another slice and press down

  2. Halve the chicken sandwich and serve if you so wish.
  3. N,B: in I prefer using whole meal bread ,or an 8 grain whole meal bread for a fiber rich and healthy snack.
