Homemade Chilli Sauce

Damn Hot Sauce Made from red bullet chillies – But however you can use any type of chillies you can find such as siracha or even green chillies. Add a dash of sugar and vinegar to give it that tangy sweet taste if you wish, but that remains optional.

Recipe Ingredients :

  • 1kg superhot bullet chili peppers,(stems removed)
  • 4 cloves garlic.
  • 12 large basil leaves
  • 1 cup vinegar
  • 1 teaspoon salt
  • I bunch coriander stems and roots
  • 4 medium red onions chopped.
  • 1-2cups distilled water
  • 1/2cup oil(either use olive, sunflower or corn oils but NOT vegetable oils)

Cooking Directions

1,Heat an oven to 300 degrees. Set the chili peppers, garlic, onions and coriander on a baking sheet and bake them about 15-20 minutes, or until the skins slightly wilt and charred but not burnt.Keep an eye on these. You don’t want them to burn, and watch out for any fumes.

2. Add pepper mixture,vinegar and water into a food processor. Blitz till you get a fine paste.

3. In a sauce pan, add oil and the onions.

Fry them till almost brown and pour in the pepper sauce to cook. Add basil leaves to simmer and reduce. Add salt and stir. Cook for 4 minutes,put off flame and remove.

4.Push the sauce through a strainer to really strain it though I like my sauce just the way it looks

This homemade chilli sauce is best made with a high-powered blender,if you do, there will be no need, but if you don’t, just blend it as well as you can with what you have and sieve out any bits you don’t want in your sauce.
