I call it a students favorite ;My version of a Curried Mince with Peas that not only irresistible but also filling meal that separates food lovers to dining afficiados.It goes well with almost any starch. Either its a spaghetti, rice, ugali or even chapati. However, mashed sweet Potatoes gives it a real Kenyan African feel.
Ingredients :
1 tbsp vegetable oil +
1 onion, chopped +
500g pack lean beef mince +
3 tbsp mild or medium curry paste or a normal Curry powder will do+
3 tbs tomato paste +
1tsp mixed herbs +
400g tomatoes peeled, chopped+
150ml fresh beef stock, hot +
1 Cup green Peas, prep boiled +
2 medium red onions, chopped +
2 cloves garlic, crashed
Salt to taste.
Method :
Heat the oil in a frying pan over a medium heat. Add the onion and garlic and cook, stirring, for 5 minutes or till slightly browned.
Increase the heat, add the mince and cook for 3-4 minutes, until browned all over.
Stir in the curry paste /or powder , cook for 1 minute, then stir in the tomatoes, herbs, tomato paste and keep stirring.
Add stock and bring to the boil, then reduce the heat to a fast simmer. Cook for 15 minutes, stirring, until most of the liquid has been absorbed.
Add the peas and cook for 2 minutes,season to taste.
Meanwhile, for the sweet potatoes, Take,
+1 big piece of peeled boiled sweet potato
+1madium onion chopped
+1glove garlic, chopped
+2 knobs butter
+2 leaves of spinach boiled and roughly chopped.
+Chillies (optional)
Procedure :
In a bowl mix potatoes and spinach, using the back of the spoon or fork crush the potatoes spinach mixture, set aside
Put into a saucepan the butter,onions and garlic.
Stir loosely until onions are pale and not browned.
Add the potato mixture, mix well, add chopped chili if you like . Reduce the heat and simmer until heated through
Serve with the curried mince. you need nothing more than a simple meal which is easy to put up.
