Fish cakes 

Fish cake is a Food  item similar to croquettes. But however the recipe which you are about to follow in  not your  regular /ordinary recipe where cooked fish is used. This is for a raw fish chopped into small fine pieces to retain the fishy taste,then mixed with other  ingredients and pan fried or grilled.
Ingredients

 

100 g white fish fillet such as grouper, snapper or even salmon will do. Basically  from sustainable sources
olive oil or butter

a few sprigs of fresh corriander

1 large free-range egg

1 lemon whereby 1/2pc is sqeezed for juice

1 tablespoon plain flour , plus extra for dusting

2 tablespoon white breadcrumbs

1pc red onion chopped

1 clove garlic chopped

Pinch Salt and pepper

Method

Step 1

In a medium mixing bowl, Add the chopped fish, potatoes, egg, onions, garlic and other dry ingredients,.Season and Mix well.

Let the mixture rest for 1/2 to 1 hrs in a refrigerator.

Step 2

Place flour on a plate. Form generous 1/4 cup fish patties about 1/2 inch thick as making burger patties. Dip patties into flour to lightly coat each side.

Step 3

In a large, preferably nonstick skillet or griddle , heat a teaspoon of olive oil over medium heat. Cook fish cakes until golden brown, about 5 to 8 minutes each side, adding more oil as needed.

Move to a paper-towel-lined plate.

Step 4

If you like. Chop onions, pickled gherkin, garlic, capers, parsley and add a little of lime juice to make tartar sauce and serve with the fish cakes  and lemon wedges.
