An old time kids favorite,Easy to make and tastes really good.Though similar to many varieties in most eateries today, Mzedu fried Chicken is spicy and crispy.

Various versions of this chicken have been invented but however mine is as easy as a-b-c. Can be prepared early in advance,freeze and reheat in an oven or microwave.Take to picnic or office.

Ingredients :

-1 PC chicken of 1 kg pre – boiled in salted water which has been cut into 4 PCs (breast and legs separated) –

-3 eggs -1/3 cup water(or milk if you prefer but it remains optional)

-1/2 cup red chili sauce( optional)

-2 cups self raising flour

-1 tsp white pepper

-1/2 cup stale white breadcrumbs -pinch of salt -oil for frying, preferably corn or sunflower oil.

Directions:

In a medium size bowl, beat the eggs with the water/milk. Add enough hot sauce so the egg mixture is bright orange/pink if using milk .

In another bowl, combine the flour and pepper. Season the chicken with the house seasoning.

Dip the seasoned chicken in the egg, and then coat well in the flour mixture.

Finish with breadcrumbs

Heat the oil to 150c degrees in a deep pot or frier .If using a pot do not fill the pot more than 1/2 full with oil, otherwise it will splash over and spill.

Fry the chicken in the oil until brown and crisp Serve with  your favorite accompaniment of either fries and coleslaw salad as commonly used . But I chose to serve with crushed arrow roots for a healthier and Kenyan feel.

  • Boiled Arrow roots(enough for the number of people which you are preparing for)
  • Red onions and garlic chopped.
  • Coriander
  • Butter

-In a pot put butter, onions, garlic and fry. -Add in the boiled arrow roots and using a wooden spoon stir and crush to a lumpy mixture. Add the coriander and pinch of salt. Serve e
